Pembroke is essentially a single medieval main street running along a ridge to the gates of its castle — and what a castle: the mightiest in west Wales, ringed by water on three sides, with a vast circular keep and the cavern of Wogan's Cave beneath. Henry Tudor was born here in 1457; the battlements, tunnels and wall-walks are wonderfully unsanitised for exploring children.
The Mill Pond wraps the castle in a moat patrolled by swans and otters (dawn and dusk, if you're lucky), and the main street keeps enough cafés, pubs and shops for slow afternoons. As a base, Pembroke opens the underrated south-west: Bosherston's lily ponds, Barafundle, Freshwater West and the Angle peninsula are all 10–20 minutes, and the Irish ferry runs from Pembroke Dock next door.
